What kind of cattle do you raise?We raise Black Angus, born and pasture-raised right here at the farm! From birth on, they live live in our pastures grazing in the open sunshine. Superior herd genetics are just the beginning of our story; every year we breed for specific genetic traits, including exceptional tenderness, marbling, and flavor - as well as ease of calving and good nature to make Max’s life a little easier!

Do you grass or grain-finish?Our cattle spend their entire lives on pasture grazing acres of a mixture of grasses and alfalfa. While still on pasture, we also offer our cattle a balanced ration of grain and minerals, which is what gives their beef a truly tender and remarkable beef flavor.

Isn't grass-fed beef better?Recent studies have shown that intramuscular fat (marbling) from grain fed beef actually provides a beneficial oil component reducing "bad" cholesterol, that grass alone cannot provide. Grass-fed only beef take 6-10 months longer to "finish", potentially reducing their tenderness score. (Mindemann’s)

How are your cattle cared for and processed?Our animals are cared for in a small group on the open pasture, where they grow well without artificial hormones. They are not shipped until they are "finished" on an individual basis. The sides are dry aged at the butcher for approximately two weeks for added tenderness. We use a state inspected locker plant for processing.

What about hormones and antibiotics?Our cattle are raised free of any growth hormones or steroids. We do not routinely feed or administer antibiotics to our animals. However, their well-being comes first, and on the rare occasion one becomes sick (usually a calf), we will administer a dose. Anything more serious, and the animal is removed from our program.

How will my beef be processed? Is it humane?Our beef is harvested at a first class, USDA inspected facility here in Wisconsin. We follow all animal welfare guidelines, which focuses on no-stress handling and quick, humane harvesting.

How much freezer space do I need?For reference, our 1/4 beef typically requires 4-5 cubic feet of space. A 1/2 beef requires approximately 9-10 cubic feet of space.

What about the odds n' ends?If you have specials requests for bones, oxtails, livers, hearts, etc. (otherwise known as the odds n’ ends), we are happy to accommodate your request. Just drop us an email and we’ll see how we can help!
